Mount Wuyi is to tea what Burgundy is to wine. In this Chinese region of Fujian Province, recognized by UNESCO for its exceptional biodiversity, tea has been cultivated on 1,300 hectares for over a millennium. "It's the same concept as the Climats; in each valley, a tea aroma is distinguished," explains Xianj Gao, Secretary General of the International Association of Terroirs (AIT).
