These foods are incompatible with freezing

Eggs, cheeses, some fresh vegetables…
Two major cheese families should also not be placed in the freezer. These are soft cheeses like Brie, Camembert, Roquefort, or Maroilles. Or fresh cheeses such as mozzarella, mascarpone, or ricotta. The reason is their water content, and once again, a concern for a dry texture, which tends to crumble upon thawing.
For the same reasons, fresh vegetables that are particularly rich in water don't belong in the freezer. This is the case for lettuce, cabbage, cucumbers, and radishes. Finally, when thawed, foods like bean sprouts and raw potatoes will lose all their crunch. Therefore, their appeal. One last point as a reminder: frozen or deep-frozen products should never be refrozen after thawing.
