- 150 gr Rigatoni. €1.86 / 500 gr.
- 200g chopped pork ribs. €3.84 / 700g.
- 1/2 onion. €1.45 / 500 gr.
- 2 egg yolks. €1.50 / 6 units.
- 1 teaspoon of oregano. 0.46€ / 11 gr.
- 1 teaspoon thyme. 0.77€ / 18 gr.
- Tomato concentrate. €1.47 / 300 g.
- Parmesan powder. €2.99 / 100 g.
- In a frying pan, brown the ribs.
- Then, we cook them with the bay leaf and the onion.
- We take out the ribs and shred them, chop the onion and save the liquid.
- Place the ribs and chopped onion in a pot, add the spices, tomato, and wine. Stir well until crumbly, and season with salt and pepper.
- We add a little of the reserved liquid and then place the prepared rigatoni.
- We check that the sauce isn't too runny. If it's dry or undercooked, we can add more cooking liquid.
- In a bowl , mix the egg yolks, parmesan cheese, and a little black pepper.
- We add everything to the saucepan and stir until everything is well mixed. It should set slightly and there should be no lumps.
