If you had to choose just one place, it would be this one. Opened in 2008 in the city center by Pietro Vergano and Andrea Gherra, both passionate about natural wine, it combines Piedmontese classics carefully executed by chef Valentina Chiaramonte (carne cruda - tartare -, agnolotti with three meats, beef braised in red wine, panna cotta, etc.) with more creative recipes, often looking at offal (lamb tripe cut in tajarin, quinto quarto combining brain ceviche, fried pig's trotters, or confit calf's lung) but also offering accomplished vegetarian dishes (asparagus, peas, pine nuts, and basil pesto). To top it all off, many Slow Food-certified products are on display here...
